Mexican Cabbage, Submitted by Chris from the Administrative Center Branch, who says, “I make this on a regular basis because it’s quick, easy and tasty! Instead of eating from a bowl, I put into a tortilla and wrap it up like a burrito. One can always add extras like cheese, sour cream, cilantro to jazz it up more. It’s a different way to eat cabbage!”

Chicken Tortilla Soup, Submitted by Kim from the Chardon Branch, who says, “This is my favorite soup recipe!”

Amazing Pork Tenderloin in the Slow Cooker, Submitted by Judy from the Geauga West Branch, who says, “It turned out tender and flavorful cooked in red wine. The recipe calls for a 2 pound pork tenderloin, but I doubled it and used two 2 pound pork tenderloins since I have a large slow cooker. I also doubled the amount of water, garlic, and soy sauce. However, I did not double the onion soup mix and wine. Also, I cook mine for about 7 hours on low, instead of just 4 hours as in the recipe. It is fall-apart tender pork that I serve in a bowl with some baked potato, sweet potato, green beans, and au jus poured over it all. Leftovers are delicious too. ”
